  1. Cheesecake Pumpkin pie

Ingredients you will need:

For the Crumb Crust

  • 1 c. 
  • graham cracker crumbs
  • 3 ttablespoons butter, melted
  • 2 ttablespoons
  • granulated sugar

For the Pumpkin Cheesecake Filling

  • 2 packages cream cheese, softened
  • 1 1/4 c. 
  • granulated sugar
  • 1 can pure pumpkin
  • 3/4 c. sour cream
  • 2 ttablespoons bourbon
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/4 tsp. Salt
  • 4 large eggs

For the Sour Cream Topping

  • 1 1/3 c. sour cream
  • 3 tbsp. granulated sugar
  • 1 tsp. vanilla extract

Sugared Cranberries

  • 1/2 c. granulated sugar
  • 3 tbsp. light corn syrup
  • 1/2 c. frozen cranberries

Time to begin with preparation:

Making the crumb crust:

  • In a pan add the graham cracker crumbs, the melted butter and the sugar. Stir all of them together using a fork.
  • With heavy duty foil wrap the mixture outside of the pan. Then bake the crust for 10 minutes at 350 F* or around 175 C degrees.
  • After finishing cool the mixture.

Making the filling:

  • Using mixer at medium speed, in a large bowl mix the cream cheese until it turn out smooth.
  • Add the sugar and blend for a minute.
  • Add the pumpkin and blend more at low speed.
  • Then add the sour cream and the bourbon, the cinnamon, ground allspice and the salt.
  • Next are the eggs, but add them 1 in a time and mix them until they are fully blended.
  • Now your crust is cooled and you can place the pumpkin mixture in the pan.
  • Bake the cheesecake for 1 hour.

Sour Cream topping

  • In a bowl add sour cream, sugar and vanilla extract. Mix them together.
  • After your cheesecake is baked, pour over this mixture and put it again in the oven. Now bake 10 minutes.
  • After that, cover the cheesecake and place it in the refrigerator for 6 hours.

Sugared Cranberries

  • Place the granulated sugar on waxed paper.
  • Heat the corn syrup to boiling.
  • With spoon transfer the cranberries onto the sugar and roll until they are coated. Let them dry.
  • When everything is ready to serve, just add the sugared cranberries on top of the cheesecake.

Here are the ingredients you will need for this pumpkin pie:

  • 1 recipe pie crust
  • 2 cans pure pumpkin 
  • 1 tsp. fresh ginger, peeled and grated
  • 1 1/4 c. heavy cream
  • 1 1/4 c. whole milk
  • 4 large eggs
  • 1 c. dark brown sugar
  • 1/2 c. granulated sugar
  • 2 tsp. pumpkin pie spice
  • 1 tsp. Salt
  • Whipped cream, for serving (optional)
  • Let the process of making begin:
  • Heat the oven to 400 F.
  • On floured work surface, place 1 rectangle of pie crust. Flour the dough and roll it into 12×10 inch rectangle, but make sure you flour enough so you can prevent from sticking.
  • Wrap the dough around the rolling pin and transfer to half of 15 x 10 inch rimmed baking sheet. Place the 10 inch side of the dough along the longest side of the pan.
  • The remaining piece of dough needs to be rolled and then the place the other half on the baking sheet.
  • Crimp and press all the edges to create rim.
  • After you are finished cover it with large sheet of paper and bake for 20 minutes.
  • Then, remove the paper and bake another 10 minutes.
  • During the baking time, in medium bowl cook the pumpkin and ginger for 10 minutes. In another bowl add all of the rest ingredients, mix them and then add the pumpkin mixture.
  • After everything is done, make sure to cool completely before cutting into pieces.
  • If you like, add whipped cream when serving it.
